Nourishing Buddha Bowl with Turmeric-Ginger Dressing



This vibrant Buddha Bowl is a celebration of nourishing ingredients carefully selected to nurture both body and mind. Packed with wholesome grains, colorful vegetables, and a flavorful turmeric-ginger dressing, this recipe is crafted with intention to provide a balanced and satisfying meal that supports overall well-being. Yet one more complete and nutrient dense option, perfect for after a deep psychedelic experience.


Ingredients:


The main Buddha bowl:

  • 1 cup quinoa, rinsed

  • 2 cups water

  • 1 sweet potato, peeled and diced

  • 1 tablespoon olive oil

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 2 cups mixed greens (kale, spinach, arugula, etc.)

  • 1 avocado, sliced

  • A handfuls of Cherry Tomatoes sliced

  • A dash of black sesame seeds

  • Salt and pepper to taste

 

And for the Turmeric-Ginger Dressing:

  • 1/4 cup olive oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon maple syrup

  • 1 teaspoon ground turmeric

  • 1 teaspoon grated ginger

  • 1 clove garlic, minced

  • Salt and pepper to taste

 

Instructions:


  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

 

  1. Preheat the oven to 400°F (200°C). Place diced sweet potato on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes, or until tender and golden brown, flipping halfway through.

 

  1. In a small bowl, whisk together all the ingredients for the turmeric-ginger dressing until well combined. Adjust seasoning to taste.

 

  1. Assemble the Buddha bowls by dividing cooked quinoa, roasted sweet potato, chickpeas, mixed greens, avocado slices, shredded carrot, diced cucumber, and pumpkin seeds among serving bowls.

 

  1. Drizzle the turmeric-ginger dressing over the Buddha bowls just before serving.

 

  1. Serve immediately and enjoy the nourishing flavors and wholesome goodness of this intentional meal!
